About Chocolate Truffles

A chocolate truffle is defined by itssoft, ganache center and its characteristic outer coating, traditionally dusted with cocoa powder, giving it a resemblance to the forest mushroom of the same name. Modern truffles have a variety of coatings, such as nuts, coconut, or chocolate, and their centers can be flavored with ingredients like fruit, nuts, or alcohol. A true chocolate truffle must have a ganache filling, differentiating it from other filled chocolates like fruit cremes or simple chocolate-covered caramels.

Key characteristics of a truffle:

Ganache center: The defining characteristic of a truffle is its soft, smooth center made from a ganache, which is a mixture of chocolate and cream.
Outer coating: A truffle is then coated in a chocolate shell or dusted with a finishing ingredient like cocoa powder, nuts, or coconut to protect the ganache and provide texture.

Appearance: Its name comes from the truffle fungus due to its dark, rough, and sometimes spherical shape.

Did you know?

Authentic Ganache: Unlike fruit creams or other filled candies, the central component of a truffle is a rich chocolate ganache.
Historical Origins: The first chocolate truffles were created in France in 1895 when chocolate maker Louis Dufour rolled spheres of chocolate ganache in cocoa powder, a technique that provided a contrast to the soft interior and made them easier to handle.
